How can I get a coterie member to just roll me a d10 other than selecting an ability/skill and just disregarding the ability? 2d10? We need flexibility not static things.

You can do that by clicking on the die icon in the bottom left (where dice appear when grabbed elsewhere or when a roll is made) and selecting the dice from there. You can add both standard and hunger dice there, and can add as few or as many as you like!
