Yes, I think that this would be a great addition. At present, I help you with the current means by which you can obtain most of the infomraiton:
On the Storyteller Level, you will need to create a Chronicle under the Chronicles Tab you will get once you entire VtM Game Area (pretty much how you get VtM Characters). When your players join the Chronicles have them add their characters. When this happens you will see an OPEN button next to each character. Without the player granting you access to make changes, you can just view their Character Sheets on Demiplane. If they do not, you can not make changes in their actual character sheet, but you CAN copy Character To Your Own Profile (provided you have the space) and then see the entire process to that date. Regardless of the method you use, ST can:
(1) Hover Over The Mini-Portrait At The Top, Get Gear Icon, Click On It⦠they you are in the Character Builder:
CREATION PROCESS (CHECK CREATION PROCESS):
GETTING STARTED > Gets You Name & Sea Of Time (Vampireās Age: Childer, Neonate, etc).
CREATION: Click On Creation will open up the Creation Process To Get The Base Character:

If they used the In Memoriam process for Creating Ancilla then at the top will be WHITE TEXT like:

If they used basic method of creation, there will only be EXP SPENT (White Text) and the list of the XP Spent in Red Text. For example:

Obviously, ST does required you to keep your own records. In our Chronicle, we award XP at the end of each game session - we note who was present and any unique XP (such as for unique performance, for Reasonance, etc.,). In AD&D/D&D, we called it an adventure log (GMs) and players notes (party scribe) were you will need to track Date | Characters Present | Session XP || PC Total XP.
So, regardless of whether or not your players give you permission to modify their sheets, from within the players in the Chronicle Section - you can OPEN > COPY then review things - if you have tracked their total XP over time, you can see if their running total is accurate AND you can see how thinsg got spent.
So, at present, all of that is possible for you to do. I apologize if I shared too much, but since I may not return to this post again and others might have the same questions - I am overly informative - so sorry in advance, if it is too much.
ADDED THOUGHTS:
I would always make the players create their Character and then add something to their name (i.e., Michael Black [CORE]. It presents their CORE CHARACTER, which you as the GM should copy and print out . Then, in the CHARACTER Section, click on the 3 Dots in the Character Bar > Make Copy, which they should put their name and ST Name or Chronicle (i.e., Michael Black [J-Chicago Nights]) which is their active character on which changes are made - so the baseline (CORE) character is always persevered.
If you want to be very specific and you have a subscription (can create tons of characters), you can create a copy of their original and then track XP on your copy of their character and any changes they make on their character must be shared and approved by you - which you make on YOUR COPY of their Character Sheet (which should match when you spot check them).
FINALLY, I have found that not all PRE-GEN characters from mini-chronicles are pure baseline characters as some have a few more things added that would cost XP. SO, if they are using a pre-gen that is not in Demi-Plane, I recommend that YOU attempt to create it using the official rules and any thing that does not fit - give PRE-GAME XP to get them to their starting point.
It can take some doing as their are often multiple ways to get to a place some cost more than others, but that is a longer process than I care to go into here. It is the reason that I have asked Demi-Plane to add a couple more of the āFREEā short Introduction Chronicles (or at least their PRE-GEN CHARACTERS so that process can be made EASY).
