I know these are just side bars but is there any chance they will have their own way to pick the talents so that the ideals and talents grant the proper buffs at the right time? like getting those bonus HP or Focus instead of a surge right away is nice.

Sure.
There are sidebar rule sections for both dustbringers and skybreakers that allow you to tweek their oath paths to better follow book lore. When doing that you unlock surges at different points and sometimes even get focus or health boosts instead.
