The radiant shardblade bow deals spirit damage which is confusing to me because it is unclear if the bow can create its own ammunition or not. Since the full radiant blade rules are yet to be released, I was unsure if this was an unintentional addition.

The information on the Shardblade is currently correct no matter what form you choose for it to take, based on the beta information provided to us.
I expect there’ll be more detailed information available in the full version of the game coming in 2025, as the Beta Rules do call out Shardbows as being a part of the full rules. 
The full Stormlight Handbook includes other special weapons: Radiant Shardblades, the massive weapons known as Shardbows or Shardhammers, and fabrial shields called Half-Shards. It also details one of the Stormlight setting’s most iconic items: the magical power armor called Shardplate.
